Lecturers and Principals

Shaun Smith's background includes Regional Chef for Woolworths, East Coast Division, and previously Executive Chef at Juara Conference Centre, specialising in Thai-Fusion Cuisine. Shaun started The Fusion Cooking School in 2002 which offers a variety of courses for both the amateur cook and the professional chef, teaching the art and science of flavour dynamics, seasoning profiles and aromatic combinations with a strong emphasis on nutrition. Shaun is passionate about Food Theatre as Culinary Art and promotes a fun, healthy, every-day lifestyle eating experience that draws on the very best of global cuisines and focuses on the creative use of herbs and spices. He is also a guest lecturer to many other educational institutions and is a WACS and SACA (South African Chef's Association) level 2 accredited judge.

Caryn England's background includes Executive Chef at the exclusive Quarters Boutique Hotel in Durban and previously, Sous Chef at Kim Williamson’s highly acclaimed AKA restaurant, where she shared a three year history before it relocated to Granny Mouse’s Country House. Caryn trained under Christina Martin and has worked in restaurants both locally and internationally, including Buitenverwachting (Cape Town), Casa da Sol (Mpumalanga), and the Wentworth Golf Estate (UK). Caryn is passionate about food and her energetic and fun-loving enthusiasm in the kitchen creates a unique atmosphere and working environment. Caryn has also received brilliant food reviews and has won the admiration of many a food critic, both locally and abroad. Caz is also a WACS and SACA (South African Chef's Association) level 2 accredited judge.

Tracy Galloway is a Lecturer. Tracy has her Advanced Diploma in Global Cuisine and Culinary Theatre, holds a National Diploma in Food and Consumer Science, and a B.Tech in Food and Nutrition. Tracy worked as a food consultant for Woolworths, launched and ran a coffee shop, and has been a lecturer at The Fusion Cooking School since 2006. Her skills are invaluable in helping us attain the high standard of education The Fusion Cooking School offers.


Louise Potgieter holds a Diploma and Advanced Diploma in Global Cuisine and Culinary Theatre. Louise worked in Mpumalanga and Swaziland after qualifying before returning to The Fusion Cooking School as a Practical Lecturer.

Our student chefs who train under Chef Shaun Smith and Chef Caryn England at the Fusion Cooking Chef School are placed in Top Durban Restaurants like cafe1999, Spice, Engineroom, Ninth Avenue Bar and Bistro, Cafe 99, Hemmingways, Sprigs, Havana Grill, Marco Paulos, Engine room, Roma Revolving, Fish Cafe, Quarters, JAM restaurant, Avondale, Florida Road, Signature Life, Three Cities, Elangeni, Beverly Hills, Harveys, Bean Bag Bohemia, Makarange Lodge, etc The Top Chef School in Durban and Top Restaurant in Durban - Fusion Cooking Chef School is a member of the chaine des Rotisseurs. Chef Caryn trained under Maitre Cuisine Christina Martin from the Christina Martin School of Food & Wine when it was still a small family run business. Chef Shaun was the Regional Chef for Woolworths.
